INGREDIENTS:
0.75 oz. lemongrass-infused Plymouth Gin
0.75 oz. Lillet
0.75 oz. Cointreau
0.75 oz. fresh lemon juice
1 drop Pernod
Combine, shake and strain into a chilled cocktail glass. Drop in one sphere of pomegranate juice and Chateau Pomari.
The Corpse Reviver is one of those classic-but-forgotten cocktails, a late-1800s hair-of the-dog concoction with innumerable variations, and just one example of “spherification”—that is, transforming liquid into semi-solid, gelatinous spheres, ostensibly implemented for molecular mixology years ago by famed chef Ferran Adria. Cointreau recently announced that they have figured out a way to mass-market spherification via their Cointreau Caviar kit. The complicated process is still evolving, with Vegas’ own BarMagic practicing reverse spherification, making it accessible for modern bars.
